My mom would make a very similar queso. I believe the only difference is the type of cheese. But we'd put it in a tortilla and roll it up and it was heavenly...YUM!!!! I'm definitely going to be craving this now!

I can't wait to try Glutino products. Over the past several months I've been having my family over a lot more often. I have four family members who have celiac. I like to be able to offer them gluten free entrees and desserts, but let's face it, I'm not a chef. I can make great flour breads and treats, but when it comes to offering something that is gluten free, I have to use a mix. Last night I made Bob's Red Mill Chocolate Chip cookies. I was so nervous when I made them because it said it would appear dry but would form into a ball when pressed together. It looked really dry. It looked like I was making pastry before adding the liquid. It was absolutely crumbs. I did my best to press them into mounds and get them onto the cookie sheet. They didn't look pretty. They looked like a mound of crumbs, slightly forming a shape that perhaps had a ball like resemblance to it. I didn't know what to offer them if they just fell apart after they were baked. It just didn't seem possible for them to work out. But they did! As they baked they went together. I cooled them completely before removing them from the cookie sheet just in case that would help them stay stuck together. Everyone who has celiac loved them, and then the strangest thing happened.....everyone else started eating them and LOVED them. Usually most of the "flour" members of my family avoid gluten free food. It's just "different". But these cookies were a hit. Tonight my family is coming over again and we're having a pancake dinner. I'm going to try Bob's Red Mill pancakes. Hopefully they're enjoyed just as much as the cookies. (That is if anything could compete with chocolate chip cookies...YUM!)

So fabulous! I don't have a gluten intolerance, but I have family who does. I usually shun most gluten free stuff. I ate these (okay, downed them --- so good) and didn't even realize they were gluten free. Delicious! I'd highly recommend them to anyone, gluten intolerant or not.

I find no problems with gluten free oats...as long as they are really gluten-free and not cross pollinated with wheat. However, I do know some Celiac's whose systems are not use to such heavy grains and therefore do best only eating smaller amounts of oats at a time. But you just have to do whatever makes you most comfortable.

And in response to the eggs...It is more egg-tasting than a crisp granola bar, but in my opinion is comparable to homemade pancakes in the amount of egg that comes through.

I will be trying your easy choc. chip cookies real soon! I can't have baking soda or baking powder (don't know why.) So sweet snacks are in short supply at my house. The oatmeal version sounds particularly appealing.

As far as I've ever seen all they really have are a variety of steel oats, instant oats, quick oats, and oat bran. So I really only use their oats. However they do now sale different flavors of instant oatmeal! They are:

Apple & Cinnamon
Maple & Brown Sugar
Regular
Variety Pack : a combination of three flavors
Fruit & Cream
Cinnamon Roll
Sugar-Free varieties

I personally love McCann's oats, but they do not guarantee they are gluten-free, (as do many companies who will not risk being sued by accidental cross-contamination, even thought they do go to great lengths to avoid such incidences)However, McCann's does publicly recognize most Celiacs never encounter a problem , but if you do not feel comfortable with this, you can always buy labeled gluten-free oats at most health food stores.
